We saw an intriguing presentation by Chef Ferran Adria of the famous El Bulli restaurant in Spain. A seat at El Bulli is in such high demand that their 2009 season is already booked. People on the waiting list often get less than a days notice when there is a space available.

He shared photos and videos of his cutting edge techniques and cuisine. Some techniques include freeze drying, vacuum sealing and even working with liquid nitrogen. One recipe entails blending tomatoes and pouring them into small balloons. The balloons are then bathed in this liquid nitrogen until frozen. The balloon is peeled away and what is left is thin red frozen orb!

    I have lots of his recipes, quite a few are vegan or vegetarian and easily veganizable. He is a genius.
