Roasted Potatoes – Quick and Easy
Great as a compliment to scrambled tofu or in a breakfast burrito. Preheat oven to 400 degrees. Cut 1 large potato into 1/2 inch cubes and place on a well oiled baking sheet or casserole dish.
Mix well and roast until a knife can easily pass through the potatoes, approximately 20 minutes. Add additional salt and pepper to taste if necessary.
