Roasted Potatoes – Quick and Easy

Roasted Potatoes

Great as a compliment to scrambled tofu or in a breakfast burrito. Preheat oven to 400 degrees. Cut 1 large potato into 1/2 inch cubes and place on a well oiled baking sheet or casserole dish.


  • Add 1 tablespoon of oil
  • 1 tablespoon of fresh minced herbs such as rosemary, parsley or dill
  • 1/4 tsp of freshly ground black pepper
  • 1/4 tsp of sea salt
  • Mix well and roast until a knife can easily pass through the potatoes, approximately 20 minutes. Add additional salt and pepper to taste if necessary.
